Pecan and Date Loaf


  • 1 teaspoon bicarb
  • 1 cup boiling water
  • 100g brown sugar
  • 1 tablespoon butter
  • 150g dates (chopped)
  • 100g pecans (roughly chopped)
  • 1 ripe banana (mashed)
  • 200g self raising flour


Heat the oven to 190°c and grease a loaf tin

Place all ingredients except the flour into a large bowl and mix well

Sift the flour into the bowl and mix well

Spoon mixture into a baking tin and bake for 45 mins to an hour, or until skewer comes out clean

Remove loaf from oven and allow to cool for a few mins

Turn out and leave to cool on wire rack
