A Cup of Chai

At this time of year, the EcoPack team’s cold and flu busting brew of choice is masala chai.

The immunity boosting effects of clove, cinnamon, and ginger make masala chai a great way to keep coughs and colds at bay. Here is our office recipe:

10 cardamom pods
12 whole cloves
2 whole star anise
2 cinnamon sticks
½ tbs fresh ground black pepper

2 bay leaves

1 thumb sized piece of fresh ginger, peeled and finely chopped

8 bags black tea (or loose equivalent)
4 cups whole milk (Low fat is okay if you must, but don’t go skim. It should be creamy.)
brown sugar or honey to taste

Lightly crush the cardamom pods, cloves, star anise, and cinnamon sticks in a pestle and mortar or crush them with a rolling pin.

Pop all ingredients (except milk and sweetener) into a saucepan and boil for 10 minutes. Strain through a very fine tea strainer and  add the hot milk, and mix, with your choice of honey or brown sugar.
