• ½ Small English cucumber (pared and diced)
  • 2 teaspoons fresh mint (finely chopped)
  • 1 clove garlic (crushed)
  • 2 teaspoons olive oil
  • pinch sea salt
  • pinch sugar
  • 1 cup thick Bulgarian yoghurt


Place the cucumber in a colander, weight lightly and leave to drain for 20 – 30 minutes.

Pat dry, then fold all the ingredients together.

Cover and refrigerate for several hours.

Spoon into a beautiful serving bowl.
