- ½ Small English cucumber (pared and diced)
- 2 teaspoons fresh mint (finely chopped)
- 1 clove garlic (crushed)
- 2 teaspoons olive oil
- pinch sea salt
- pinch sugar
- 1 cup thick Bulgarian yoghurt
Place the cucumber in a colander, weight lightly and leave to drain for 20 – 30 minutes.
Pat dry, then fold all the ingredients together.
Cover and refrigerate for several hours.
Spoon into a beautiful serving bowl.
