Wholesome Veggie Fritters

TM-1710 Root Vegetable Patties


2 medium sweet potatoes, boiled and mashed

½ cup (125 ml) millet or oats, cooked

¼ peeled butternut or 3 small carrots, grated

2 to 3 large free-range eggs

fresh corn cut off 1 cob

½ cup (125 ml) peas, boiled

1 red onion or 3 spring onions, finely diced

1 cup (250 ml) oat or rice bran

big handful fresh mint, chopped

big handful fresh basil, chopped

1 tsp (5 ml) ground coriander

2 tsp (10 ml) herbal salt

pinch of cayenne pepper

coconut oil for frying



Instead of oat bran use psyllium husk or ¾ cup (200 ml) chickpea flour



–     Place all ingredients in a bowl and mix well.

–     Heat the oil in a nonstick pan.

–     Take tablespoons full of the mix and form into patties in the pan. Fry on each side till golden and set in the centre.
