Portuguese Bean Bruschetta


  • 100g butter beans
  • chervil (to garnish)
  • 1 chilli (chopped)
  • 5 thin slices ciabatta (toasted)
  • 3 cloves garlic (crushed)
  • 50g green beans (blanched)
  • 10g mixed baby salad leaves
  • 50ml olive oil
  • 15g parsley (chopped)
  • salt and pepper (to taste)
  • 10ml spirit vinegar


Mix the beans together, and warm slightly

Mix the garlic, chilli, parsley, olive oil, vinegar and seasoning together, and toss marinade through beans

Allow the beans to marinate overnight

Top the slices of ciabatta with mixed baby salad leaves and beans and garnish with chervil
