- 1-3ml chilli powder
- 1 tin chopped tomatoes
- 50ml fresh coriander (chopped)
- 2 cloves garlic (finely chopped)
- 1 green pepper (diced)
- 5ml ground cumin
- 1 tin kidney beans (drained and rinsed)
- 1 onion (chopped)
- 1 box soya mince
- 30ml sunflower oil
- tortilla chips and avocado (to serve)
Heat the oil and sauté the onion until soft. Add the garlic and green pepper and sauté for another minute. Add the spices and fry until fragrant.
Add the soya mince, tomatoes and beans, and water according to the instructions on the soya mince packet. Season to taste. Simmer for 10 to 15 minutes. Stir through the coriander and serve with tortilla chips and sliced avocado.
