Preheat oven to 210°C. Line 2 baking trays with non-stick baking paper.
Heat oil in a large frying pan over medium-high heat. Cook the spinach, tossing, for 2-3 minutes or until wilted. Set aside to cool slightly. Squeeze out excess moisture. Finely chop.
Lightly whisk 1 egg in a bowl. Stir in the spinach and feta. Season with pepper.
