- 100g barley (cooked)
- 2 cloves garlic (crushed)
- 200g mature cheddar (grated)
- 30ml mixed herbs (freshly chopped)
- 300g mixed vegetables
- 30ml olive oil
- onion (sliced)
- 250ml sour cream
Heat the olive oil in a large frying pan and sauté the onion and garlic.
Add the mixed vegetables and stir-fry for five minutes. Mix in the cooked barley, fresh mixed herbs and half of the cheese.
Place the mixture into a greased baking dish and top with the sour cream or cheese sauce. Sprinkle over the remaining cheese and bake for 15 minutes or until golden.
