Ingredients:
For the cauliflower crust:
1 small head of cauliflower, florets removed
¼ cup grated Parmesan cheese
¼ cup grated Mozzarella cheese
½ teaspoon dried oregano
½ teaspoon dried basil
½ teaspoon garlic powder
¼ teaspoon crushed red pepper
¼ teaspoon salt
1 egg
For the topping:
¼ cup homemade tomato sauce
½ cup mozarella cheese
Also add any other toppings of your choice including poached eggs if you decide to make this for breakfast.
Preparing your Cauliflower Pizza Crust:
-Remove the florets from your head of cauliflower.
-Place the florets in a food processor or blender and pulse until fine. You should have about 2½-3 cups of cauliflower.
-Transfer the cauliflower to a microwave safe bowl and microwave for 4 minutes. Let your cauliflower cool completely.
-Place the cauliflower in a towel and wring it tightly. THIS IS A CRUCIAL STEP!!!! You need to get as much moisture out as possible.
-Place the cauliflower pulp in a mixing bowl and add the cheeses, spices, and the egg
-Mix until well combined.
-Form the dough into a ball (or bollie) and place it on silicone baking sheet.
-Bake for 10-15 minutes until the dough is golden brown. Carefully remove it from the oven.
Add your toppings and place under grill till the cheese is melted and gorgeous.
I added courgette ribbons and mushrooms to mine but be creative and make your own food rules! Involve the kids and come up with your own creations.
If you are adding a poached egg do so right at the end.
