Ingredients
- 5g basil leaves
- 80g butter
- 200g frozen petit pois
- 3g garlic (finely chopped)
- 20g onion (finely chopped)
- salt and pepper (to taste)
- 100ml vegetable stock
Directions
Saute onion, garlic and half the butter in a saucepan
Add petit pois and then add vegetable stock
As soon as the mixture starts to boil, add basil and the remainder of the butter
Season, remove from heat and blend until smooth
Pass through a sieve and discard the remaining pulp
Reheat and check for seasoning
Serve and garnish with fresh basil leaves
