Granny Smith Apple Soup


  • 1 teaspoon fresh mint leaves (thinly sliced)
  • 4 Granny Smith apples
  • ¼ cup icing sugar
  • 2 tablespoons pomegranate seeds
  • ½ cup sour cream
  • 2 tablespoons winter melon (diced)


Juice the apples

Place the juice, sour cream and icing sugar in a blender and process until very smooth

Share the soup equally between two serving bowls

Garnish with the pomegranate seeds, mint and melon
