Ingredients
- 1 teaspoon fresh mint leaves (thinly sliced)
- 4 Granny Smith apples
- ¼ cup icing sugar
- 2 tablespoons pomegranate seeds
- ½ cup sour cream
- 2 tablespoons winter melon (diced)
Directions
Juice the apples
Place the juice, sour cream and icing sugar in a blender and process until very smooth
Share the soup equally between two serving bowls
Garnish with the pomegranate seeds, mint and melon
